RECIPE:
RECIPE FOR SALSA
8 3/4 POUND TOMATOES
(JUICE RESERVED)
2 1/8 POUND HATCH PEPPER
(SEEDS AND SKIN REMOVED)
1 1/4 POUND ONION CHOPPED
1 CUP VINEGAR (WHITE 5% ACID)
3 TABLESPOONS CANNING SALT
2 TABLESPOONS SUGAR
Mix all ingredients in a large stock pot and simmer for 30 minutes.
LEMON JUICE – ADD 1 TEASPOON OF
BOTTLED LEMON JUICE TO EACH PINT JAR
