Instant Mini Uttapam stuffed with Alu tikki. Ingredients for the batter:

1 bowl curds and 1 bowl sooji (upma rava)


Ingredients for the Alu Tikki:

1 bowl boiled and mashed potatoes.
Urad dal, mustard and cumin seeds for seasoning.

Method of preparation of batter:

In a bowl mix curds and sooji well making the consistency equal to that of dosa .keep it aside for a while.


Method of preparation of Alu Tikki:

In a frying pan pour 2 spoon of oil.
To the oil add urad dal, mustard and cumin seeds.When these crackle and become pinkish add the boiled potatoes and mash a little with a masher ,to it add salt ,tumeric and chilli powder and mix well.On cooling make small flat rolls out of it.Hmm! the Alu tikki is ready.

Method of preparation of Uttapam:

In the batter mix half a pouch of Eno.
Heat a pan .Pour one table spoon of the batter ,on it place one alu tikki and again pour one table spoon of the batter covering the Alu tikki .Pour one small spoon of ghee/butter/oil on it and leave it to get cooked.Turn it and keep on pressing the Uttapam so that the alu tikki spreads evenly throughout the Uttapam .Remove when it gets crispy and pinkish brown.

Serve with corriander chutney and tomato sauce.

.... yum ... Uttapam is ready.

Note..Butter milk or even plain water can be used instead of curds.
If curds is less than a bowl ,butter milk can be used.
