Vietnamese Chive Oil (Mỡ Hành) | How To Preserve Chives This recipe is definitely a new household favorite for us. We put this stuff on just about everything! Not only do the chives add flavor to your food, but the chive flavor is also infused in the oil, which adds to the profile.

Simply harvest your chives, wash them, dry them, and chip in fine slices. Layer them into a mason jar with salt (sugar optional). Heat some neutral flavored oil, like Avocado, or Sunflower, and pour it over the chives - but be CAREFUL, the grease will splatter when the moisture in the chives turns to steam. Let is cool, and place in your fridge. For long term storage, let it cool, and store in your freezer.
