So, today I am sharing 3 other recipes for the mold.

TIPS:
* All bites are cooked with 1 cup water, on High pressure and with Quick Release.
* All bites can be refrigerated in a container for 1 week or frozen for 3 months.
* Each recipe makes 14 bites.
* Stack the molds in a staggered position, so the cups don’t line up. Then you won’t have lids sucked in and deformed bites like I had. Live and learn. :)
* If you have 3 quart Instant Pot here is the mold you need - with silicone and not plastic lid!
* Trivet with handles is highly recommended for putting and removing egg bites. This one fits any size Instant Pot.
* Here is mold with built-in handles & trivet
* If egg based bites puff up too much, they will go down during cooling and next time divide mixture more evenly.
* Only brownies need a bit cooling time to settle, others can be removed immediately.
* Molds shown fit into 6 quart IP and used in this video 8 quart DUO

#1 MINI MEATLOAVES
* 1 lb ground turkey, beef or chicken
* 1 large egg
* 1/4 cup any oats
* 1 tsp garlic powder
* 1–2 tsp balsamic vinegar
* 2 tsp dried herbs like oregano, basil and thyme
* 1/2 tsp salt
* Ground black pepper, to taste
1. In a large bowl, combine all ingredients and mix with spatula.
2. Spray molds with spray and divide mixture evenly between 14 openings and close with lids. Stack molds and place on a trivet.
3. Add 1 cup water to Instant Pot and place trivet with molds inside.
4. Close vent to Sealing and press Pressure Cook on High or Manual button for 25 mins.
5. Release pressure right away by turning valve to Venting.
6. Remove trivet with molds and remove meatloaves with a fork onto a plate.
7. Brush with ketchup if desired.
#2 EGG WHITES EGG BITES
* 2 cups egg whites (16 oz)
* 1/3 cup mild salsa
* 1/2 cup (1.5 oz) packed Parmesan
* 1/2 tsp baking powder
1. In a large measuring cup, whisk all ingredients.
2. Spray molds with spray and pour mixture into 14 openings evenly and close with lids. Stack molds and place on a trivet.
3. Add 1 cup water to Instant Pot and place trivet with molds inside.
4. Close vent to Sealing and press Pressure Cook on High or Manual button for 8 mins.
5. Release pressure right away by turning valve to Venting.
6. Remove trivet with molds and remove egg bites with sticking a fork in the middle or pop them out.
#3 HEALTHY BROWNIES
* 14 oz can low sodium black beans, rinsed and drained (here is how to cook black beans in Instant Pot from dried )
* 2 large eggs
* 1/2 cup maple syrup or honey
* 1 tsp baking powder
* 1/3 cup cacao (cocoa) powder
* 1/4 tsp salt
* 1 cup almond flour or meal
* 1 tsp vanilla
1. In a blender or food processor, add all ingredients and process until smooth (45 secs in high speed blender).
2. Spray molds with spray and divide batter evenly between 14 openings using an ice cream scoop with trigger and close with lids. Stack molds and place on a trivet.
3. Add 1 cup water to Instant Pot and place trivet with molds inside.
4. Close vent to Sealing and press Pressure Cook on High or Manual button for 15 mins.
5. Release pressure right away by turning valve to Venting.
6. Remove trivet with molds, let brownies cool about 1 hour and then remove with small spatula.
