Piglins immediately drop items once they picked up gold ingots but hold the ingot for a few seconds longer. If they're killed during that time they will drop the gold ingot again. Of course this can be exploited to get items without any cost of gold with a mob spawning setup and some redstone that brings the gold ingot back into position.
