잡채(Japchae) | Stir-fried glass noodles & vegetables
(serves 2 served with rice, serves 1 without rice)

[Ingredients]
Dried glass noodles 60g
Dried shiitake mushroom 2 ea.
Dried black fungus mushroom(also called dried wood ear mushroom) 4 ea.
Sliced onion ½ cup (½ medium-sized onion)
Julienned carrot ½ cup (⅔ medium-sized carrot)
Red bell pepper ½ ea. (cut into matchsticks)
Spinach 1 cup

[Japchae sauce]
Soy sauce 2 tbsp
Water 1 tbsp
Sugar ½ tbsp (or 1 tbsp of agave syrup)
Minced garlic 1 tsp (1 medium clove)
Chopped green onion 1 tsp (⅓ stalk)
Sesame oil ½ tbsp
Black pepper to taste

[For cooking]
Vegetable oil 1 tbsp (any vegetable oil with high smoking point and neutral taste: avocado, grapeseed, rice bran, canola, sunflower, soy, etc.)
Salt ¼ tsp (to season onion & carrot while stir-frying)

[For garnish]
½ tsp toasted sesame seeds
